Cinnabar Winery
Cinnabar produces Santa Cruz Mountains Cabernet Sauvignon, Pinot Noir and Chardonnay as well as Paso Robles Merlot, Monterey Chardonnay and Mercury Rising, a Bordeaux-style blend.
The weathered mountain soils are mostly red clay-loam with layers of shale evident at greater depths. Relatively lean, their excellent water holding capacity minimizes the need for irrigation. Non-till farming feeds the naturally existing ecosystem and helps maintain a balanced nutritional life cycle. Cover crops preserve good soil structure, promote water infiltration, prevent erosion, and provide a haven for beneficial insects and organisms.
- Cabernet Sauvignon. Cabernet benefits from lean mountain soils at 1,650 feet of elevation. Hilltop and southwestern exposures provide extensive sunlight and warm daytime temperatures.
- Chardonnay. Chardonnay is planted just above the fog line at 1,400 feet above sea level where hilltop and eastern exposures provide regular sunlight. Vines welcome the influence of recurrent morning fog as the air is refrigerated in and around it.
- Pinot Noir. Pinot noir lies on a steep slope with northeast exposure. Two clones were planted at 1,200 feet on the coolest portion of the property. Each was chosen for the specific qualities it would contribute to the finished wine.
Our tasting room. Located in the quaint, historical village of Saratoga, flanked by the magnificent Santa Cruz Mountains; Cinnabar is the first stop on the Saratoga Wine Trail. Cinnabar’s outstanding wines, sensational gift items and Baskets by Cinnabar when presented by our knowledgeable, gracious staff combine for a memorable experience. The Premier Tasting includes Cinnabar’s Tapestry wines (the widely distributed Mercury Rising, Paso Robles Merlot and others), as well as selections from our limited production, exclusive release “Alchemist” series, available only to Alchemist Wine Society club members and at the Tasting Room. The Advance Tasting includes all wines in the Premier Tasting plus two selections from our Medallion series (which may feature our Santa Cruz Mountains Cabernet Sauvignon, Chardonnay & Pinot Noir). Our Alchemist Wine Society members and their three guests receive complimentary tastings.

Baskets by Cinnabar. Being ever so conscious of the environment and looking for every opportunity to be more “green”, we have carefully chosen a new approach to filling this year’s gift baskets. Instead of being filled with large cardboard boxes containing small quantities of treats, they now contain useful and reusable items that will appeal to just about everyone on your list: ice buckets, bottle stoppers, wine coasters, cheese knives and other wine-service accoutrement.
